Unfortunately, the darker the roast the more susceptible it becomes to losing it's freshness; and roasting it too dark can give it a burnt flavor. Different coffee shops use many different types of espresso, so check out the coffee shops around you to choose the espresso that best pleases your palette. It is also important to patronize your local shops: they will most likely either roast their own espresso or purchase it from a local roaster, ensuring the freshness of the espresso.
